Pumpkins are rich in carotenoids, the compounds that give them their bright orange color, including beta-carotene, which the body converts into Vitamin A. Vitamin C and Vitamin A are key for good vision and a healthy immune system. The antioxidant beta-carotene is also consumed to prevent certain cancers due to its free radical neutralizing qualities. The free radical fighters also fight wrinkles and nourish the skin.
